In order to successfully freeze your peppers, you’ll need to do a wee bit of work to prepare them first, for best results.

  1. Select the right peppers – Choose bell peppers (also called sweet bell peppers or sweet peppers) that are firm, fresh, and free from blemishes or soft spots. You can freeze any color bell pepper – green bell peppers, red bell peppers, yellow bell peppers, you name it – so don’t just stop at green.
  2. Wash and dry the peppers – Rinse your whole peppers under cool running water to remove any dirt or residue. Pat them dry with a paper towel.
  3. Remove seeds and membranes – The best way to do this is to cut the tops and bottoms off of the whole bell peppers and then slice one side in half lengthwise and lay the pepper out flat like a strip. Remove the seeds and membranes using a paring knife or spoon and discard.
  4. Slice or dice the peppers – Decide whether you prefer sliced or diced bell peppers for your recipes. Slice peppers into thin strips or dice them into smaller pieces.

    1. Good finds! I must shop on the wrong days because I rarely catch them in the marked down section. They won’t be crunchy after being frozen and thawed, but if you’re going to use them in a stew or soup or other meal where you are going to cook them soft anyway (like fajitas or such), then freezing them first works great!

  1. I have been freezing bell peppers for years. I just chop and freeze in freezer bags. We mostly use them in omelets. I mix the colors of bells together and use what I need then zip it up and place back into the freezer. Works great!

  2. I too have been freezing bell peppers (and onions) successfully for years. And I also chop some and leave some sliced!! My only suggestion is to lay it all flat on foil or parchment, on a cookie sheet. Benefits? 1) freezes faster, = better, and 2) since they’re already frozen when you put them in the zippy they don’t freeze into a giant ice ball of peppers … super easy to take out just what you need ‘cuz they’re “flash frozen” and loose.

    1. They will no longer be crunchy after freezing, so they are best used in meals where they will be cooked. For salads where you probably want a crunch, I would stick with raw/fresh.
