Easy Creamy Caesar Chicken – a Simple, 3-Ingredient Crockpot Freezer Meal

Today I bring you another easy crock pot freezer meal – a simple yet delicious take on Chicken Caesar! It is a favorite for busy weeknights.

There are only three ingredients, so it takes mere minutes to make up this dump and go slow cooker recipe. The bold flavors and creamy sauce make this a very versatile meal – serve over pasta, on a simple salad, or use it to make delicious chicken Caesar wraps or sandwiches!

Ingredients

There’s really nothing fancy here – you’ll need only 3 simple ingredients:

  • chicken – I prefer using boneless skinless chicken breasts, but you can use chicken thighs as well.
  • prepared Caesar salad dressing – pick your favorite creamy Caesar dressing. If you will be making this for someone eating keto, or if you’re not needing to watch the budget tightly, I recommend going with a good quality Caesar dressing here. My younger kids don’t always appreciate the nuances of flavors and tastes, so I go with the cheap stuff. For now…
  • Parmesan cheese – you’ll want shredded (either pre-shredded or grate your own) rather than the stuff in the canister bottle (although you may want that as well for garnish)

Prepping Your Meal

One of the greatest things about this easy chicken freezer meal is that there is NO pre-cooking and, unless you opt to grate your own Parmesan cheese, there is no prep work!

Place your raw boneless chicken breasts into a gallon-sized zip-top freezer bag.

Add in the entire bottle of Caesar dressing.

Add in your shredded Parmesan cheese.

Remove as much air as possible and seal the bag. Then, gently smoosh (yes, that’s my technical term) the bag to mix the ingredients inside.

Label and date your freezer bag, and then place it flat in the freezer to freeze.

That’s it! That’s all there is to this incredibly easy chicken recipe.

Pro Tip

This is a GREAT recipe to have your kids help you make! It is easy enough for them to handle, and kids love to smoosh the bag to mix everything up!

To Make the Creamy Caesar Chicken Freezer Meal

To make your meal, remove the bag from the freezer and allow it to thaw overnight in the refrigerator.

While the “sauce” in this recipe is fairly thick, you may want to place your freezer meal on a tray or in a large container inside your refrigerator to catch any liquid that may leak from the bag as it thaws.

The next morning, dump the contents of your meal bag into your slow cooker or crock pot, set the temperature to LOW, and cook for 6-8 hours.

Pro Tip

Your cook time may vary, as slow cookers can have a wide range of cooking temperatures across brands and models. If you cook at too high of a temp or for too long, your chicken can turn out dry and rubbery. I have found that both of my slow cookers end up fully cooking the chicken in this meal in about 4 hours.

Serving Suggestions

I like to serve this over pasta, and garnish with fresh parsley and some grated Parmesan cheese (the stuff from the canister bottle works just fine here).

Serve with a simple green salad on the side for a delicious and easy meal.

Make It Keto

This meal will work for a low-carb diet. Omit the pasta, and serve over a bed of fresh romaine lettuce, with a little lemon zest or dash of lemon juice, a fresh grind or two of black pepper, and a handful of crumbled bacon on top. (Yeah, it’s totally not traditional, but trust me on this one.)

Storing Your Caesar Chicken

For best results, store any leftover chicken in an airtight container in the refrigerator for up to 3 days.

You can also portion it out for meal prep. Store it in a separate compartment from your lettuce though, to avoid the lettuce getting soggy.

Turn It Into Baked Caesar Chicken

To turn this into a Baked Caesar Chicken, simply thaw your freezer meal and then pour the contents of the bag into a casserole dish or 9×13 baking dish, and bake at 400 degrees Fahrenheit for 20-25 minutes until the centers of the chicken are thoroughly cooked through (reach an internal temperature of 165F). Remove from oven, add additional grated cheese on top, and place back into the oven for 5-10 more minutes until the cheese has melted.

INGREDIENTS
 

  • 2 lbs boneless, skinless chicken breasts

  • 1/2 cup shredded Parmesan cheese

INSTRUCTIONS

To make freezer meal:

  • Place chicken, dressing, and Parmesan cheese in gallon-sized freezer bag. Knead carefully to mix.
  • Make sure bag is fully sealed. Label and date.
  • Place flat in freezer to freeze.

To cook:

  • Remove bag from freezer and place in refrigerator overnight to thaw.
  • The next morning, place contents of bag into slow cooker.
  • Cover and cook on Low for 4-6 hours or on High for 2-3 hours until chicken is fully cooked through.
  • Carefully remove chicken from slow cooker, place on a cutting board, and shred using two forks.
  • Return shredded chicken to slow cooker and mix into sauce.
  • Serve over rice or noodles.

NOTES

If you prefer,  you can turn this into a Baked Caesar Chicken.
