I bring to you my do-it-yourself, just-add-water Buttermilk Pancake Mix in a Jar, adapted from the award-winning Perfect Buttermilk Pancake recipe from The New York Times.

And trust me, these pancakes DO NOT disappoint!

We have made them SO many times, and every single time they are an undeniable hit!!

With this easy mix, you can get the great tastes and textures of the perfect buttermilk pancake, together with the convenience of a pre-made mix. No need to pull out multiple ingredients every time you want to make pancakes. Everything you need is in a single jar.

Perfect for Camping

Because the only ingredients you need for this Buttermilk Pancake Mix in a Jar are already measured, and mixed, and ready to go, this recipe is PERFECT for camping trips!

Make up a couple of jars to take with you on your next trip or RV escapade.

If you’re concerned about the glass jar, you can place this mix in a gallon ziptop storage bag (not recommended for long-term storage), a plastic airtight food storage container, or even a mylar bag (okay for long-term storage).

And if 18 pancakes is more than you need, you can easily split this recipe in half and make the perfect amount of buttermilk pancakes for just two or three people.

Ingredients Needed

For this amazing (but totally homemade) buttermilk pancake mix, you’ll need some basic pantry staples which you likely already have on hand:

  • all-purpose flour
  • granulated sugar
  • baking powder
  • baking soda
  • salt

The last three ingredients you’ll need are not regular pantry staples, unless you’re weird like me…but that’s another issue ENTIRELY…so you’ll need to purchase these online (in most cases):

  • buttermilk powder
  • powdered eggs
  • butter powder

While it’s a bit of an extra pain to source these, they are SO handy to have in your pantry, and I fully recommend keeping them stocked for everyday use.

I use buttermilk powder in my Make-Ahead Muffin Mix recipe, as well as in my Protein Mug Muffin Mix.

Powdered eggs also get used when I make muffins from my muffin mix – instead of using 4 fresh eggs, just sub in 1/4 cup powdered eggs and add an extra 1/4 of water.

And the butter powder, well, you’re going to see it pop up in a couple of different recipes, such as the Butter Chicken in a Jar, and an upcoming Cornbread in a Jar.

Supplies Needed

Nothing fancy needed here, just your standard requirements for all meals in a jar. You know the drill by now probably.

  • quart-size wide-mouth mason jar
  • wide-mouth lid and band (lid does NOT have to be new, but does need to be able to seal down properly)
  • vacuum sealing device for jars (either a mason jar sealer, or a FoodSaver with a jar attachment)
  • and/or an oxygen absorber

To Layer or Not to Layer…That Is the Question!

You have two options for making the pancake mix in a jar:

  • You can layer the ingredients directly into your quart mason jar.

OR

  • You can mix them all in a bowl and THEN pour the contents into your quart mason jar.

On this recipe, it’s really just whatever you prefer.

If you’re gifting these, you might want to do the layers, for a prettier presentation.

Either mix your ingredients and pour, or layer ingredients individually, into a clean wide-mouth quart-size mason jar.

Handy tip: Use a funnel!

Using a stainless steel canning funnel will GREATLY reduce the complexity of getting powdered ingredients into your jar. While it’s not strictly necessary, trying to pour powdered ingredients into a jar, even a wide-mouth one, can make for a bit of a mess. Investing in one good canning funnel is a smart idea, and you’ll find you will use it in lots of different applications.

Once your ingredients are in the jar, use a clean cloth or paper towel and wipe the rim of your jar to remove any fine particles that might interfere with the seal.

If using an oxygen absorber, place that gently on top of the dry ingredients.

Then place your lid on top, and use your vacuum sealer (a handheld sealer or FoodSaver with attachment) to seal the lid onto the jar.

Et voilà! That’s all there is!

Storing Your Buttermilk Pancake Mix in a Jar

Stored properly, your buttermilk pancake mix will keep for 6-12 months.

Your limiting factor on storage is the shelf-life of your leavening agents, the baking powder and baking soda, which is generally 6-12 months.

After this time, the mix is still safe to use, however the pancakes may not be quite as fluffy.

You’ll want to keep your jar in a cool, dry location, out of direct sunlight and avoiding locations with significant temperature fluctuations. Be sure to put the jar somewhere safe where it will not be knocked into or knocked over, and where it cannot easily be knocked off a shelf if possible.

If you’re giving this as a gift, go ahead and put a cute label on it, and be SURE to include directions for making the pancake mix!

Making Your Buttermilk Pancakes – So Easy!

When you’re ready for some amazingly easy and amazingly delicious buttermilk pancakes, all you need to do is open your jar and dump the contents (minus any oxygen absorber you might have used) into a large bowl.

Then add in the water, and mix until just fully combined. (Don’t overmix!)

Cook on your favorite available heat source (griddle, skillet, flattop, campfire, etc.) and enjoy! That really is all there is to it!

INGREDIENTS
 

For the buttermilk pancake mix:

  • 2 cups all-purpose flour
  • 10 tablespoons buttermilk powder
  • 3 tablespoons granulated sugar
  • 3 tablespoons powdered eggs
  • 2 tablespoons butter powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/4 teaspoons kosher salt

Needed for making the pancakes:

  • 2 1/2 cups water

INSTRUCTIONS

To Make Pancake Mix:

  • Add all dry ingredients into large mixing bowl and stir gently to mix.
  • Pour dry mix into a clean, dry wide-mouth quart mason jar using a canning funnel.
  • Wipe rim of jar with clean cloth or paper towel to remove any powder.
  • If using oxygen absorber, place it gently on top of dry ingredients in jar.
  • Place clean wide-mouth lid on jar and seal using an electric jar sealer or a FoodSaver with a jar attachment.
  • Label jar and store in cool, dry location away from direct sunlight or temperature extremes.

To Prepare Pancake Mix for Cooking:

  • Gently pry off jar lid and dispose of oxygen absorber if used.
  • Pour contents of jar into a large mixing bowl.
  • Add 2 1/2 cups of water and mix until just combined.
  • Cook pancake batter using your favorite method.

NOTES

This recipe will make 18 4″ pancakes using a #20 disher/scoop.
