An update…
I am still here. Barely. I will be honest – this diet change is no joke. It is HARD! I feel like I’ve had every ounce of energy sucked out of me. When I did this before, about two years ago, it took me almost a solid month to get over the “sugar/carb flu” symptoms. I’m only at three weeks. So hopefully the end is near.
I went through my shots of my apple sauce – they are not pretty. I know everyone says I should just post them anyway, but I’m picky. And it’s my blog, so my rules, right? 😉 But I’ll probably post them anyway…And I’m going to have to make an exception for the picture for this post as it is.  It was shot spur of the moment seconds before I headed out to deliver the meals.  EVERYTHING is wrong with it.  But hey, it’s all I’ve got.  🙂  And did I mention that my normal camera is dying??  Not good timing unfortunately…
Right now I’m just trying out recipes that others have made that fit this new eating style. It will take time for me to get comfortable enough to start branching out on my own with ideas of things that will work. So hang in there – I promise there are LOTS more freezer and make-ahead meals coming! Oh, and I’m helping a family member out with some pre-made meals as she is going through a dietary transition also, so I’ll have some ideas to share on individual portions and meal preps, too! (I made 13 pre-prepped meals last Saturday, all ready to just be heated in the microwave.)
